Coconut, Toffee and Pig Candy (candied bacon) Ice Cream

Rich, creamy and delicious. This bacon ice cream recipe will surprise and delight.


Ice Cream Base

  • 1/2 Granulated Sugar
  • 1/4 Brown Sugar (Packed)
  • 1 cup Whole Milk
  • 2 cups Heavy Cream
  • 1 pinch Sea Salt
  • 2 teaspoons Coconut Extract

Crunchy Bits

  • 1/2 cup Shredded Coconut
  • 1/4 cup Toffee (You can get them next to the chocolate chips in most grocery stores (I got mine at the bulk food store) you could also take a hammer to a skor bar, that would be good too ;))
  • 1/2 cup Pig Candy (Chopped - Recipe Included Below)

Pig Candy

  • 10 thin slices Quality Bacon (Make your own if you are up to it, It really is worth it)
  • 1/2 teaspoon Cayenne
  • 1/2 cup Brown Sugar
  • 1/3 cup Maple Syrup


There is intentionally more pig candy in the recipe than is strictly required and that is for 2 reasons.

  1. You can use some extra pig candy to crumble on top of the ice cream.
  2. It's freaking pig candy, who can't use a few extra slices?


Ice Cream
Step 1.
With a handheld whisk or hand blender (set to low) gently mix sugars, salt and whole milk until salt and sugar have completely dissolved into the milk (should take 1-3 minutes or so).
Once dissolved, add cream and coconut extract.
Let stand in the fridge for a few hours before putting in your machine.
Put mixture into ice cream maker and churn as per your machine's instructions (typically, you will add the crunchy bits during the last 3-5 minutes of churning.
Pig Candy
Step 2.
This can be done in the oven though I prefer using the smoker. Get your smoker nice and hot - around 350 degrees F.
Step 3.
Place bacon on cooling rack and sprinkle one side with brown sugar and cayenne. Put in smoker for 15 minutes then flip and repeat brown sugar and cayenne.
Step 4.
After 15 minutes drizzle maple syrup over bacon and cook 5 more minutes, flip the bacon and repeat.
Step 5.
Refrigerate until bacon has hard "candy" like texture
