Contains neither turd nor buffalo but still well worth trying, particularly if you are allergic to either turd or buffalo.

- 1/4 cup Velveeta
- 1/4 cup Sharp Cheddar (Shredded)
- 3 cloves Garlic (Roasted)
- 2 heaped teaspoons Dry Rub (we use SRQ Butt Rub)
- 24 "Smokey" Mini Cocktail Sausages
- 1/4 cup Cream Cheese
- 1 - 2lb Maple Bacon (cut in half)
- 12 Jalapenos (Cored & stems trimmed)
Replacing the Smokey's with some left over brisket, rib, chicken or pulled pork works a treat. You can nix the Smokey altogether if that's how you roll.
|Cut the stem off the jalapeños and remove seed from inside.|
|Cut jalapeño in half width wise creating a tube and a tip, then cut the tip lengthwise creating 2 "small canoes" (you can simply cut them in half and omit the tube. We do it this way so we can use the jalapeno tube to make 'Dillo and kill 2 birds with 1 stone).|
|Cut bacon in half creating approximately 3" strips|
|In a large bowl, mix together all remaining ingredients to make a smooth cheese paste|
|Scoop a generous amount of cheese mixture into each jalapeno canoe|
|place a "Smokey" in the centre of each canoe and press gently to nest into the cheese.|
|Take two (2) 1/2 strips of bacon for each ABT and lay them on a cutting board in the form or a "+" as an "x" obviously won't work. |
Put a stuffed jalapeño canoe in the centre of each "+" and wrap the bacon so it meets in the centre on top.
Skewer the ABT with a toothpick to keep the bacon from peeling back.
|Place on smoker at 225 degrees F for 2 hours.|
